They always used a regular, glass loaf pan for roasted garlic: microwave for 10 minutes or so first, then bake for awhile. 1C olive oil, 1C red wine, 5 fists of garlic, everything baked together, and you have a fabulous salad dressing once it's cooled & you hit it with an immersion blender.David T. Then wash out the tin as soon as the garlic cools enough to remove the foil. Should work and it does indeed mean less pans in the kitchen. Don't like the idea of a garlic infused muffin tin either.
