Cinnamon Raisin Struan Round-Up

The March Bread Baking Babes bread was Cinnamon Raisin Struan Bread from Brother Juniper's Sacramental Magic in a Small Town Cafe. (Brother Juniper is Peter Reinhart.)

We had three intrepid bakers join us as Buddies and each of their breads was different, but wonderful!


Gilad Ayalon of Gilad Ayalon Vegan mostly used the given ingredients but used a Tartine method of folding and made a beautiful loaf with marbled cinnamon and dots of raisins and a great crust. She said, "I changed the recipe and the sequence, but tried to keep the percentage between the flour and the other grains. The sequence is my modification to the Tartine’s bread sequence (A lot of kneading instead of the autolyze phase)."


Marcin from Poland, of Grahamka made a sourdough version. It "was made on real polish sourdough from wholemeal rye flour, which is a base for dark wholemeal bread and for the most famous Polish soup."


Shirley of Flour.ish.en Test Kitchen made the Struan bread using sprouted flour from King Arthur Flour. It opens up a whole other level of bread baking!

One Fab Buddy


I'm going to blame it on summer heat, because I know that the Babes who made Beignets this month liked them a lot. Only one brave baker made the August recipe, although she used a brioche dough.

Congratulations to our sole Buddy for August, Shirley of Flourish.en Test Kitchen who made beignets with a lemon glaze and dusted with maple walnuts. She used an olive oil based brioche dough. She went a step further and created Brionuts, a cross between brioche dough and a donut.

"I shaped the remaining brioche dough in a donut shape. Let them rest for a short while, then deep frying them in the 375°F safflower oil. Voila, I just made my own version of "brionut," a brioche and donut hybrid."

So much better than a Cronut, plus no lines to stand in.

Buddy, Buddy, Buddy...

It's always fun to see the great bakers who choose to be Buddies and bake with the Bread Baking Babes towards the end of the month. Since I was the lucky Kitchen of the Month for June it was even more fun to see all the ways that our Buddies...and there were quite a few...took the recipe and made it their own, in one case skipping right over our recipe and going back to Farine's wonderful Morning Cuddles that inspired our recipe.

Different nuts were used, different flours, different dried fruits, even different levains. Overall these talented bakers made each kind of twist their own, so now we have lots of options when we want to make 'em again...as many have said they will.

Many thanks to our bodacious Bread Baking Babes for all of their versions, too. We had everything from thin bread sticks to nice wide twists perfect for sandwiches. Below are the Buddies in alphabetical order. Each entry has a link to their post so that you can go and admire their lovely Oatmeal Twists!

 Agnes of Szeretetrehangoltan blog - made Oatmeal Twists - beautiful twists with whole wheat flour, rosemary and walnuts from her garden. Lovely oatmeal on top of twists.

 Breadsong of The Fresh Loaf blog - made Barley Twists - substituting barley malt and flour for the oats and adding golden raisins and Breadsong also made Cinnamon Cuddles, very much inspired by Farine.

Carola of Sweet and That's It blog - made Oatmeal Twists -  with a nice vanilla touch, also she substituted oil for the butter to lower calories and used dried cranberries and pecans. She didn't like the way the first ones turned out (although they tasted fine) and her second batch, as you can see if you go to her post, are beautiful twists!


Cathy of Bread Experience blog - made My Buddy Twists - crusty twists using a spelt levain and spelt flour, hazelnuts, and dates.  They look yummy.

Connie of My Discovery of Bread blog - made Farine's Morning Cuddles -  with walnuts and dates and a lovely rustic twist. They baked up golden even with the challenge of almost running out of fuel.

  Gilad of Vegan - made Oatmeal Twists - lovely twists, braids and a crescent using potato and soy flours and oil to make them vegan, plus dried plums and nuts for flavor.

  Judy of Judy's Gross Eats blog - made Oatmeal Twists - using oatmeal flour instead of the oatmeal, making the poolish, freezing them, too.

Kelly of A Messy Kitchen blog - made Summer Twist - creatively made with cinnamon, pecans and twisted into a bit hug! There is even the plus of frosting.

Sandie of Crumbs of Love blog - made Oatmeal Twists - lovely little twists packed with oatmeal, dried fruits and nuts using the poolish with a little rye flour added. Sandie used dried blueberries and pecans and, it seems, probably in another batch, dried figs and walnuts with a little anise seed...sounds great.

New Information and Some I Forgot

The Bread Baking Babes will have their third anniversary in February... and we need your help.

Dream your biggest, bestest dream of what bread you would like us to bake in February...and send it by December 29th to the Babe for that month, our dear Tanna of My Kitchen in Half Cups. Just e-mail the recipe or suggestion (including recipe is best) to her. One per person.
Remember thats DECEMBER 29th...coming soon. Actually you can send a suggestion up through January 7th!! Please do...we would love to bake YOUR suggestion!

Here is what Tanna said (includes her address):

The 'I forgot' part is that when I posted my cute taralli for the December Bread Baking Babes post, I forgot to include the invitiation to be a Buddy and bake them too. The recipe is on my blog and at our kitchen of the month for December, Ilva of Lucullian Delights. Again, you have until DECEMBER 29th to bake the taralli, post about them and send an e-mail to ILVA
