Happy Birthday To Me
This year I was really able to enjoy my birthday, so I did things I love...going to the gym (I know, hard to believe that I'm addicted), walking the dog with Sweetie, picking out flower seeds at the Hardware store, talking with my daughter and others on the phone (they called me!), a little gardening, a little watercolor time, starting one of the parts of tomorrow's Valentine baking, a lunchtime visit from a dear friend, TV with Sweetie after a nice dinner with grandma, a little Facebook time and ending it with some fun with Photoshop. It was a very pretty day, too. Thank you to everyone who sent birthday wishes, brought flowers, gave cards, and to Sweetie for the perfect gift and day.

Heading for the Humid
It's been rainy in Northern Virginia this week, so I know things will be very green and smell wonderful and walking outside may be a bit like taking a shower with your clothes on...the wonders of the DC area humidity. Still, it is for a good party that I'm headed that way, so I won't complain. With luck Mark the Man will be dispensing adult beverages with lots of ice that will make the humidity seem unimportant.
While I'm off partying, be sure to check out the Bread Baking Babes on the 16th (in a week) for a new and wonderful bread.
If you've planted a garden like I have, give those new starts plenty of water (unless you, too, have been having rainy weather). Sweetie is going to water my seedlings and flowers. Pi is going to chase the wild turkeys away so they don't eat the plants. By the time I'm back we may have young, tender zucchini to eat!
So, why am I leaving in May when the garden calls my name? Because it is a special birthday for a super special woman...my Mom. Happy Birthday Mom!!

Design Instead of Food
Today, and part of yesterday, plus a day a week ago, I was really glad that I spent the time last fall and winter learning InDesign. Sometimes it comes in handy to know a bit about Illustrator and Photoshop, too.As I know I've mentioned in the past, I belong to a great group of gals called P.E.O. Chapter AJ. We are part of the larger P.E.O. International organization, which is a philanthropic education organization, meaning a large number of women working together to fund educational opportunities for women. Just this year our Chapter has been part of awarding over $6,000 in scholarships to 7 women. Organization wide we are talking millions of dollars to help women reach for the stars and meet their educational goals. We've been around since January of 1869 in the U.S. and for almost that long in Canada.
So why am I telling you these two things dear reader? Because yesterday and today I spent the time I probably would have used to cook or bake something (which could be posted here) to create an invitation to our Chapter's 100th Birthday party.
We're going to invite all of our Chapter members and some friends to a tea party...and I got to create the invitations graphics and text...and print them...and cut them...and fold them...and stuff the envelopes...and address and stamp them. It's the kind of thing I'm good at and enjoy...and it's for a very round number birthday. You know that I love birthdays!So tomorrow I'll be back with something yummy I cooked or baked and photos of the same but for today I only have photos of the filled envelopes and the front of the invitation. Wish you were going to be coming.

Happy Birthday to Me

I won't tell you the exact date, but I will tell you that my lovely and talented daughter has given me a trip to Seattle for my birthday so there will be few posts until next Monday. I'm really excited! We will be seeing Avatar in IMAX and I've been waiting to see it with her. I'll get to meet one or more of her friends, do some glass fusing, do some shopping and eating out and walking around her neighborhood. She and I are also slated to have breakfast with two of my favorite bloggers...Lynn of Cookie Baker Lynn (now a blogazine author at Simple Bites) and Peabody of Culinary Concoctions by Peabody, one of the most drool worthy sites you will ever find and home to excellent photography, too. Even if it rains...and it probably will...I will be having a blast!
As far as birthdays go, my take on it is every year I celebrate a birthday means that I have lived and experienced another year...and usually learned wonderful things and had fun with great people and often helped some other human beings along the way.
Bread has been baked, delicious dishes cooked and photographed and posts made on this blog. Other blogs have been visited, often with delight and laughter...most bloggers seem to be far funnier than I am. Walks will have been taken with Sweetie and the bread baker's dog. Project will have been undertaken and time spent in hardware stores (almost as much fun as cookware stores :) Books have been read and conversations taken place. This year has included a new haircut, too, after many years of more or less the same old same old. Life is a never ending source of amusement and fascination to me. Ever year I want another one, so here's to my next birthday, too!
Some days at work I get a surprise like I did today. I didn't bake my birthday cake, or even a Valentines cake, but I did get to bake a cake for Walter. He wanted a cake with pineapple and whipped cream. I went online and looked at a lot of pineapple cakes. Although some were similar, none were exactly like the one I ended up making, so I'm calling it Walter's Pineapple Cloud Cake.
Since I wasn't expecting to bake today I didn't bring my mixer with me. It seemed best, since all the batter would be hand mixed, that I use cake mix from a box. I changed it a bit by using melted butter and Greek yogurt instead of vegetable oil. That provided both moisture and fat. Considering all of the whipped cream, it was probably gilding the lily, but should taste wonderful that way!
Speaking of the whipped cream, I'm here to tell you that a whisk will do the trick quite well, but my wrist was tired by the time I did two batches. If you are using an electric or stand mixer, you can beat it all at once and then divide it.
This cake is a vanilla cake baked in a baking pan (normally I would use a 9" x 13" pan, but this was going to the home of an ill man and I didn't want them to have to worry about keeping track of the pan). A can of crushed pineapple in juice is drained while the cake bakes, and the juice is used to moisten the baked cake while it is still warm. The remaining pineapple is folded into half of the whipped cream (one of my batches) and spread over the cake...it ends up being about an inch thick. Then the remaining whipped cream is spread over the pineapple mixture and given some pretty swirls. Once it has chilled for a while it is ready to eat.
Since I didn't have an opportunity to either cut a piece of this cake or to photograph or taste a piece, you'll have to go with my photo of the top of the cake and the assurance that it is a delicious cake, simple and elegant and light as a cloud!
Walter's Pineapple Cloud Cake
1 box yellow cake mix
1/2 pint Greek style yogurt, plain
2 tablespoons butter, melted and cooled
1 1/4 cups water
1 can pineapple in it's own juice (about 15 oz)
1 pint heavy whipping cream, chilled
1/2 teaspoon vanilla extract
Prepare the cake mix according to package directions, but use the yogurt and butter in place of oil. Bake in a preheated 350 degree oven about 30 minutes, or until cake springs back when you poke the center.
While cake is baking, drain the pineapple, reserving the juice.
When the baked cake is removed from the oven, use a skewer to poke holes all over the top, about 1/2 inch apart. Pour the drained pineapple juice evenly over the cake, letting it seep into the poked holes. Set pan in the refrigerator to cool while you whip the cream.
In a large bowl whip the cream. Divide in half.
To one half of the whipped cream add the drained crushed pineapple and fold in with a spatula until well blended. Spread this mixture over the top of the cake and smooth the top evenly.
To the second half of the whipped cream, add the vanilla extract and beat that in until combined.
Place dollops of the whipped cream over the pineapple mixture on the cake and spread over the cake, making decorative swirls or peaks as desired.

Chill cake for at least an hour to combine flavors and set the whipped cream. Keep refrigerated if there is any left to store after serving.

A Significant Birthday Event
I have been accused of being (rightly) a bit of a nut about birthdays. I love birthdays and celebrating that people I care about were born at just the right time to be part of the current flow of history.Some birthdays are even more special than others. When you are young even turning from three to four is a very big deal. Eighteen and twenty-one mean you are legal in one way or another, perhaps even an adult. At thirty some begin making a big deal each time we hit a round number birthday. Hey, not everyone want to celebrate birthdays the way I do, so once a decade is enough.

I don't know about you, but I find Peabody's blog to be a source of inspiration, always a good read, and, if I am honest, a place where I can 'enjoy' some outrageous desserts without adding a pound to my hips. Her photos make you want to lick the screen...again no calories involved. She has been providing all of this fun, to say nothing of her infamous Snickerdoodle Muffins, for many years. Don't you think she deserves a birthday party??

This is not a surprise party & you may want to head over to her blog and wish her a happy day in her comments section, but you'll miss a hellava party if you don't join the celebration and make something special just for Peabody. Here is mine for inspiration - a warm, gooey bread pudding with cinnamon rolls as the base, rich custard for comfort and lots of chocolate and caramel sauce because Peabody really seems to like chocolate and caramel sauce.
Cinnamon Roll Bread Pudding for Peabody4 cups cubed cinnamon buns – each bun cut into 4 – 8 pieces, depending on the size of the bun – about 1 inch cubes are what we are aiming for

2 cups milk
1 tablespoon butter
¼ cup brown sugar
4 eggs
¼ teaspoon salt
½ teaspoon vanilla
½ cup chocolate chips or chunked dark chocolate (optional)
1/3 cup caramel sauce (optional) (I used Smuckers sauce for ice cream)
hot water
Preheat oven to 350 degrees F.
In a saucepan, scald the milk, then melt the butter in the milk. Let cool slightly.
Lightly beat the eggs in a mixing bowl, then add about ¼ cup of the milk mixture and stir to temper the egg-milk combination. Add another ¼ cup and stir, then stir the egg mixture into the saucepan with the milk mixture. Stir in the brown sugar, salt and vanilla. Set aside.
Place the bread cubes in a large bowl. Pour the milk egg mixture over and stir gently. Let sit 5 minutes, then stir again to get the less soaked bread cubes get into the soaking liquid. Let sit 5 minutes, add the chocolate if using, then stir once more. Let sit five minutes.
Butter a baking dish large enough to hold the mixture. I like to use a wide and relatively shallow baking dish so there is more of the crispy bread bits, but if you like the custardy part better, use a more narrow and deep dish.
Pour the pudding mixture into the buttered dish and push down slightly on the cubes to settle everything. Sprinkle with some more chocolate if you like.
Bake by placing the baking dish in a roasting pan and pouring hot water about half way up the side of the baking dish.
Bake for about 1 hour until the top is crusty and the interior custard is cooked to baked custard consistency.
Serve warm with a drizzle of caramel sauce if desired.

Musings in February
Funny how we really don't see ourselves clearly.This week I was having lunch with K and she gave me a wonderful birthday gift...a satin scarf in a lovely Baroque print in shades of brown and green. She was anxious because she wasn't sure it was my style (in fact it is just right for me!) and said that she doesn't have any style herself, which was why she was worried. That startled me because the day before I had been thinking that I wished I had her sense of style. She is always beautifully coordinated. She says that she just wears tops and bottoms, but her tops have embroidery, lovely wooden beads, and other embellishments, plus the colors are perfect for her.
Then I received a wonderful letter from Grandma L. She said that I am a formidable woman, as well as smart and other nice things. I had never thought of myself as formidable! Forceful, perhaps, and a go-getter, but maybe some of that translates into formidable. Who knew?
One thing I'm not is perfect (well, who is really?) and I proved that last night. I decided to bake some Anzac cookies for Sweetie for Valentine's Day in heart shapes. After dinner I put together the batter, even adding some anti-oxidant dried fruit mix to offset the butter. In to the preheated oven they went, I checked my watch for the time, then went and did some e-mail. My nose is notorious...I can't smell things burning until they are well and truly charred. That is what happened! The poor things were black on the bottom and sides. The broiler had been on to broil pork chops for dinner and I guess it made the oven hotter than it should have been. So the bad news is that there won't be any cute cookies for V-Day, but we are such sick puppies that the good news is we ate about half of them anyway, char and all.
I'm including a photo of how they looked, plus one of a batch I made a while ago that look like they are supposed to look. Also a shot of golden syrup dripping into the pan...the golden syrup is the 'secret ingredient' for these yummy bites. I use Lyles' Golden Syrup from the import section of my grocery store.
Happy birthday to me and Happy Valentine's Day to y'all. Hope your Valentines treats work out better than mine did!
